My Wi-Fi keeps disconnecting during long streaming sessions

When the DHCP lease renews the device gets a new IP. Some apps lose connection at that point.

Fire Stick: Settings > Network > [Your WiFi] > Advanced > IP Settings > Static.

Set IP, Gateway, DNS and save. Make sure the IP is outside your router's DHCP range.

Three hours without disconnect. That was definitely the issue.

Also check if your router has a 'power save' mode that disconnects idle clients.

Turned off router power save and also using static IP now. Zero disconnects.
